Mom's Coffee Cake

This coffee cake is extremely moist. The extra mixing is all worth it. You’ll get multiple requests for this family favorite. It’s great with a cup of coffee for brunch, or as an after-dinner dessert.

  • 2 boxes instant vanilla pudding

  • 1 yellow cake mix (without pudding)

  • 4 eggs

  • 2 tsp. vanilla

  • 1 c. water

  • ½ c. oil

 

Topping:

  • ½ c. sugar

  • ½ c. brown sugar

  • 2 tsp. cinnamon                                                                                                

  • Mix batter for 10 minutes and pour half into a 13X9 greased pan. Add half of the topping. Pour remaining batter on top and then remaining topping. Swirl with knife. Bake at 325 degrees for 35-40 minutes. Best the next day.
