Cider Chicken

2 tbsp. olive oil

2 tbsp. butter

4 boneless, skinless chicken breasts

Salt and ground black pepper

1/2 onion, chopped

1 apple, cored and sliced into 1/4-inch wedges

3 cloves garlic, minced

2 tsp. dried thyme

2 bay leaves

2 tbsp. all-purpose flour

1 1/2 c. apple cider
Heat oil and 1 tbsp. butter in a skillet over medium-high heat. Season the chicken breasts with salt and pepper, add to pan and brown until golden, about 3-5 minutes each side. Remove chicken, and set aside. Add 1 tbsp. butter, onion, apple, garlic, thyme and bay leaves. Saute until onions soften, about 5 minutes. Add flour and stir 3 minutes. Place chicken back into pan, add cider, bring to a boil, reduce to a simmer and cover. Cook until chicken is cooked through, about 13-15 minutes.
